White Cheddar/Chipotle Smashed Potatoes

Ingredients:
2 lbs. Idaho® russet potatoes, cut into chunks and cooked until tender
3/4 to 1 cup hot milk or half and half
2 Tbs. butter
2 Tbs. sour cream
1 tsp. kosher salt, or to taste
1 cup shredded extra-sharp White Cheddar cheese
2+ Tbs. chipotle sauce (Cholua)
Instructions:
Strain potatoes.
Smash potatoes with potato masher; add other ingredients
Mix well but leave a little chunky.
Serve hot.
