Potato Farm Egg Salad

Ingredients:

  • 1 Idaho potato, baked
  • 1 egg, hard-cooked
  • 1 red beet, baked
  • 1 oz fresh basil
  • 3 oz balsamic dressing (recipe follows)
  • Balsamic Dressing
  • 1/2 cup balsamic vinegar
  • 1 teaspoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • Salt & pepper to taste
  • 3/4 cup olive oil

Instructions:

  1. Refrigerate potato, egg and beet overnight. Slice into rounds and arrange plate. Spinkle with basil and dressing.
  2. To make dressing, thoroughly combine vinegars, mustard, mayonnaise, and salt and pepper. Continue mixing slowly adding olive oil.
