3 cups mashed potatoes (I used Idahoan Butter & Herb Mashed Potatoes)
¼ cup buttermilk
½ cup sliced scallions (4-5 scallions), plus more for topping
1 cup cheddar cheese (3 ounces), shredded
2 eggs
2 tbsp butter, melted
½ cup flour
½ teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon kosher salt
oil to spray or brush on the waffle maker
sour cream, for serving
crispy bacon, for serving
Instructions:
Preheat the waffle iron.
If using Idahoan Instant Mashed Potatoes, it will take you a few seconds to prepare it according to package instructions.
Mix together mashed potatoes, eggs, buttermilk, flour, baking powder, baking soda, butter, and mix until combined. Mix in cheddar and scallions.
Once the waffle iron is hot, spray or brush some oil on both sides. Add the potato mixture to your waffle maker and cook until the waffles release from the iron and are golden brown, about 5 minutes, though you may need a minute more or less depending on your iron.
To serve, top the waffles with sour cream, chopped scallions and crispy bacon pieces.
