4 Idaho® potatoes, washed, baked, peeled and cut into 3/4 inch cubes
1/2 pound lobster meat, cooked
4 ounces corn, roasted and cut off the cob
2 ounces bleu cheese, crumbled
2 ounces scallions, sliced
1/2 cup sour cream
1 cup mayonnaise
1/2 cup crème fraiche
1/2 ounce lemon juice
1 tablespoon dill
2 tablespoons basil
1 tablespoon whole grain mustard
1 teaspoon ancho chile powder
To taste salt and black pepper
Instructions:
In a bowl prepare the dressing by mixing the sour cream, crème fraiche, mayonnaise, blue cheese, lemon juice, dill, basil, whole grain mustard, Ancho powder, salt and black pepper.
Fold in potatoes, lobster, corn, scallions and adjust seasoning as needed.
