Garlic Mashed Potatoes and Grilled Garlic Shrimp

Ingredients:
Garlic Mashed Potatoes
3 pounds Idaho® potatoes
1 cup heavy cream
4 ounces butter
1 teaspoon fresh garlic, minced
To taste salt and pepper
Grilled Garlic Shrimp
1½ pounds tiger shrimp, peeled
3 tablespoons extra virgin olive oil
½ cup mixed herbs (basil, tarragon, oregano)
½ teaspoon fresh garlic
½ teaspoon shallots
salt and pepper to taste
Instructions:
Peel the potatoes, cut into cubes and boil in salted water until soft. Drain.
Heat cream and butter in a medium saucepan until slightly warm.
Add potatoes to a mixing bowl and slowly whip until smooth.
Add warm cream and butter to the potatoes and mix for 2 minutes.
Add garlic, salt and pepper and mix until thoroughly combined, about 1 minute..
Grilled Garlic Shrimp
Preheat grill.
Toss the shrimp with the oil, herbs, garlic, shallots, salt and pepper in a mixing bowl.
Grill for 3-4 minutes, turning halfway through, or until pink on each side.
