Fresh Spinach and Roasted Garlic Aoili (Mayonnaise)
Ingredients:
- 2 cups fresh, cleaned spinach
- 6 cloves roasted garlic
- 1 peeled shallot
- 1 TBS rice wine vinegar
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tsp Pernod (anise liquor)
- 1 TBS grated Romano cheese
- 4 each egg yolks
- 1 + 1/2 cups salad oil
Instructions:
- Place all ingredients, except the oil, into a food processor and process until smooth. Slowly add the oil in a steady stream until fully incorporated.
