Serving Idaho Potatoes at a Charity Event

Do you have any suggestions for serving potatoes at our local charity events?

Answer

I just came back from a series of events in South Beach Miami and at several venues potatoes played an important role in the type of foods the chefs, many of them Food Network stars, served to the attendees. I saw versions of potato croquettes, lots of potato chips or slices of potatoes used to hold something delectable to taste, and light salads using potatoes such as a lobster, celery root and purple fingerling salad.
