Is it Okay to Store Potatoes in Water for Over 24 Hours?

Is there any health risk from storing potatoes in water in the refrigerator for longer than 24 hours?

Answer

No health risk in storing the potatoes in water. Whoever is peeling or cutting the potatoes should wash their hands before handing the vegetables and wear a kitchen glove if they have any exposed cuts, as cold water will not automatically kill any germs.
