Hello I cubed about 2 pounds of potatoes last night and put them in olive oil and seasoning, then left them covered in a glass bowl on the counter. I wanted to bake them tonight for dinner, but I'm not sure if these are safe to eat. Please advise.

However, to be on the safe side, it’s always best to err on the side of caution and start with a fresh batch for preparation and consumption. Any food left open like this for extended periods of time (such as overnight) as a general rule should not be consumed.
