How do I keep the potatoes from sprouting and going soft?

Answer

Potatoes will naturally sprout after being harvested in about 120-150 days. Idaho potato growers have found ways to store the potatoes in ideal temperatures, just above 40°F, with high humidity. They also use sprout inhibiting methods and technology to extend the life of the potato for up to a year.
