Can I use red potatoes for au gratin potatoes?

Answer

Red potatoes will work ok. The russet, especially from Idaho has a higher starch and solids content as well as less moisture than a red, so it is nicely suited for Au gratin, since it tends to stick together for the layering of potatoes in Au Gratin or scalloped dishes.
