Do older potatoes lose water more quickly than fresh potatoes? If so, why?

Answer

All produce is mostly 90-plus percent water, and potatoes in comparison are closer to 79 percent water and 21 percent solids. Potatoes are an amazing food source. And as living organisms, potatoes will eventually dehydrate even when held in ideal storage conditions. As potatoes age in storage, they will slowly respirate moisture content, so it’s best to use and consume as soon as practical.
