I Forgot about Peeled Potatoes in the Refrigerator for a Week. Are these Still Okay to Eat?

I peeled, diced, rinsed and refrigerated yellow potatoes, but unfortunately I forgot about them. One week later they still look fine, there's no odor or discoloring, just a little white on the edges. Can these potatoes be cooked and eaten? I want to make potato pancakes with them.
