Question

Can I Refrigerate Blanched French Fries?

I am starting a food truck and want to offer fresh-cut loaded fries. My question is…after the first fry, can we refrigerate (not freeze) the fries? That way when someone orders, we only need to fry once.

Answer

This is the kind of food truck I’d wait in line for! The answer is yes, you can refrigerate the fries. In fact, this is recommended. Store refrigerated blanched fries in shallow bus type trays until needed. French fries are a both a science and moving target considering all the factors of potato varieties, cut dimensions, oil, methods, etc. Here’s a good start to the numerous Dr. Potato topic strings at: https://idahopotato.com/foodservice/dr-potato-on-french-fries
