Idaho® Potatoes and Carbohydrates

I’m thinking about cutting back on carbohydrates, but still love to eat Idaho® potatoes. How exactly do potatoes fit into the whole, anti-carb diet craze?

Answer

Dr. Potato isn’t a real doctor of course but has spoken to medical doctors, nurses, dieticians and other health professionals over the years. Their opinion? We need carbohydrates! It is fuel for our bodies. Of course not all carbs are good, as they fall into ‘simple’ and ‘complex’ groups – the latter is where potatoes are, being a nutrient-dense, heart-healthy vegetable.
