Can I peel and cut my potatoes the night before, leave them in cold water, and boil them the next day?
It is so hectic at Thanksgiving, anything that can be done ahead of time just makes sense. Peel the potatoes, cut into even sized chunks and add some acidity to the chilled water. A teaspoon of white wine vinegar or concentrated lemon juice will help keep the potatoes from oxidizing and turning gray. Refrigerate covered until ready to use.
